1 1/4 cups all-purpose flour
1 cup granulated sugar
1/4 cup unsweetened cocoa powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup vegetable oil
1/2 cup buttermilk
1 large egg
1 tablespoon red food coloring
1/2 teaspoon vanilla extract
1/2 teaspoon white vinegar

16 oz cream cheese, softened
1 cup granulated sugar
2 large eggs
1 cup melted white chocolate
1/4 cup heavy cream
1 teaspoon vanilla extract
1 cup cranberry or raspberry juice (for color and flavor)
1/4 cup sugar
1 tablespoon gelatin powder
Whipped cream
Dark chocolate shards

Step-1 : Red Velvet Cake Layers:
Preheat oven to 350°F (175°C). Take 2 round cake mold of 8-inch and grease them well.
In a bowl, sift together flour, sugar, cocoa powder, baking soda, and salt.
In another bowl, whisk together oil, buttermilk, egg, red food coloring, vanilla, and vinegar.
Now, mix all dry ingredients alone with the liquid batter mixture.
With a measurement machine divide the batter between the mold and bake just for 25-30 mins. Next let the cakes cool.
Preheat oven to 325°F (165°C).
As cream cheese is little beat salty so in this stage the sugar should be added to make the cream smooth.
Next to start with eggs that should add one by one.
The most important thing, melted white chocolate, heavy cream, and vanilla must be mixed here well.
Pour the batter into an 8-inch springform pan lined with parchment paper. Place the pan in a larger baking dish and add hot water halfway up the sides of the springform pan.
Bake for 45-50 minutes or until the center is slightly set.
When it will be cool enough let it stay in refrigerator until set perfectly.
Step-3: Prepare the Red Velvet Gelée Topping:
For fruit filling add berries with sugar heat till the sugar dissolved.
Mix gelatin and water let it sets for 5 mins, pour it to hot berries.
Place the cool filling over the cheesecake cake layers.
On the serving dish take one cake layer, spread cream frosting according to your choice.
Place the other cake layer one on the top of first one.
Decorate it with gelee topping, then garnish with whipped cream, chocolate and most importantly red velvet cake crumbs.
